Puréed Potatoes

650g Potatoes

100g butter

150ml milk

Salt & pepper

Preheat your sous vide to 90º/194ºF

Dice potatoes roughly & add the milk, butter & seasoning to your bag. Use the water immersion technique to lower into your sous vide.

Sous vide at 90º/194ºF for 2 hours

Remove from the sous vide & keep the juices.

Blend until smooth & season more if required. Serve immediately or hold in the sous vide or reheat later in a pan.
