Saffron Potatoes

Ingredients

350g potatoes (peeled & cut into thick slices)

2 tbsp Ghee (or butter)

1/2 tsp saffron

2 cardamom pods

salt & pepper

Melt the ghee & add the saffron.

Steep for 20 mins & if vacuum sealing: cool in the fridge until the ghee sets.

Sous vide the potatoes, ghee & aromatics.

Sous Vide at 194 º F /90 ºC for 45 mins

Remove from the sous vide and serve straight away or pan fry to crisp up.
