Serves 2, Ingredients:
100g polenta, instant
800ml veg stock
30g parmesan, grated
2 tbsp yoghurt
Bring the veg stock to the boil and slowly add your polenta while whisking. Continue stirring until the polenta is smooth and no longer very grainy - about 20 minutes. Then stir in the cheese, yoghurt, salt and pepper and leave aside.
